So far, I have been more than happy with the performance of my 8GB M1 MacBook Air. I consider myself a power user, but not a heavy user, and I've never come close to using up that RAM. My usage in both Windows and now on Mac tends to stress CPU more than it does memory, if it stresses anything (I don't do sound, video or photo editing). What a great machine!
