As you note in passing, Apple no longer sells machines with 8GB RAM, so it's very difficult for anyone to buy a new machine with this much RAM. (I recently switched from an 8GB to a 16GB MacBook Air, and though the smaller amount of RAM always performed well for me, I was never entirely comfortable with only 8GB.)

And I must gently rib you for saying "creative work" requires active cooling. Writing is also a creative endeavor, and my creative work has never gotten my machine hot enough to throttle.
